Ingredients
- 800g firm white fish fillets (cod or sea bass)
- 400ml coconut milk
- 3 tbsp palm oil (dendê)
- 2 large tomatoes, sliced
- 2 bell peppers, sliced
- 1 large onion, sliced into rings
- 4 cloves garlic, minced
- 1 bunch fresh cilantro, chopped
- 2 limes, juiced
- 1 chili pepper
- to taste salt and black pepper
Instructions

1Marinate the fish with lime juice, salt, and minced garlic for 30 minutes.

2In a clay pot or heavy pan, layer half the onions, tomatoes, and peppers on the bottom.

3Place the marinated fish on top, then cover with the remaining vegetables.

4Pour the coconut milk over everything and bring to a gentle simmer.

5Cook covered for 20 minutes until fish is cooked through.

6Drizzle the palm oil over the stew in the last 5 minutes of cooking.

7Garnish with fresh cilantro and serve immediately over white rice.
