Ingredients

  • 2 barley rusks (paximadia)
  • 3 ripe tomatoes, grated
  • 150g feta cheese, crumbled
  • 4 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 12 Kalamata olives
  • 1 tbsp capers
  • to taste salt and pepper

Instructions

    Briefly dampen the barley rusks with water, being careful not to make them too soggy.

    Spread the grated tomatoes evenly over each rusk.
  3. 3
    Top generously with crumbled feta cheese.
  4. 4
    Drizzle with olive oil and sprinkle with oregano.
  5. 5
    Garnish with olives and capers, season to taste.
