Khanom Krok (Thai Coconut Rice Pancakes)

Ingredients

  • 1 cup rice flour
  • 1/2 cup tapioca flour
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 cup thick coconut cream
  • 2 tbsp sweet corn kernels
  • 2 tbsp chopped green onions

Instructions

    Mix rice flour, tapioca flour, coconut milk, water, sugar and salt until smooth. Let batter rest for 15 minutes.

    Heat a khanom krok pan or aebleskiver pan over medium heat and lightly grease each well.

    Fill each well 3/4 full with batter, then add a small spoonful of thick coconut cream on top.

    Sprinkle with corn or green onions. Cover and cook for 4-5 minutes until edges are golden and crispy.

    Gently remove the half-spheres and press two together to form a ball. Serve warm.
