Ingredients
- 1 cup rice flour
- 1/2 cup tapioca flour
- 1 cup coconut milk
- 1 cup water
- 1/2 cup sugar
- 1/4 tsp salt
- 1/2 cup thick coconut cream
- 2 tbsp sweet corn kernels
- 2 tbsp chopped green onions
Instructions

1Mix rice flour, tapioca flour, coconut milk, water, sugar and salt until smooth. Let batter rest for 15 minutes.

2Heat a khanom krok pan or aebleskiver pan over medium heat and lightly grease each well.

3Fill each well 3/4 full with batter, then add a small spoonful of thick coconut cream on top.

4Sprinkle with corn or green onions. Cover and cook for 4-5 minutes until edges are golden and crispy.

5Gently remove the half-spheres and press two together to form a ball. Serve warm.
