Ingredients
- 4 eggs
- 2 ripe tomatoes, diced
- 1 green bell pepper, diced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1/2 tsp Turkish red pepper flakes (pul biber)
- 1/4 tsp black pepper
- to taste salt
- 2 tbsp fresh parsley, chopped
Instructions

1Heat olive oil in a wide pan over medium heat. Sauté onion until softened, about 3 minutes.

2Add green pepper and cook for another 2 minutes until slightly tender.

3Add diced tomatoes, salt, and red pepper flakes. Cook until tomatoes release their juices and soften, about 5 minutes.

4Crack eggs directly into the pan and gently stir to create soft curds, keeping the mixture creamy and not fully set.

5Remove from heat while still slightly wet, sprinkle with fresh parsley and serve immediately in the pan.
