Ingredients
- 200g red lentils
- 150g fine bulgur
- 1 medium onion, finely chopped
- 3 tbsp olive oil
- 2 tbsp tomato paste
- 1 tsp cumin
- 1/2 tsp red pepper flakes
- 1 bunch fresh parsley, chopped
- 4-5 spring onions, sliced
- 1/2 bunch fresh mint, chopped
- 1 lemon, juiced
- to taste salt
Instructions

1Rinse red lentils and cook in 400ml water until soft and water is absorbed, about 15 minutes.

2Remove from heat, stir in bulgur, cover and let stand 10 minutes until bulgur absorbs moisture.

3Sauté onion in olive oil until soft, add tomato paste, cumin, and red pepper flakes, cook 2 minutes.

4Mix onion mixture into lentil-bulgur, add salt and knead while still warm.

5Let cool, then add parsley, spring onions, mint, and lemon juice.

6Shape into oval patties with wet hands and arrange on a platter.

7Serve at room temperature with lettuce leaves for wrapping.
