Ingredients

  • 200g red lentils
  • 150g fine bulgur
  • 1 medium onion, finely chopped
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1 bunch fresh parsley, chopped
  • 4-5 spring onions, sliced
  • 1/2 bunch fresh mint, chopped
  • 1 lemon, juiced
  • to taste salt

Instructions

    Rinse red lentils and cook in 400ml water until soft and water is absorbed, about 15 minutes.

    Remove from heat, stir in bulgur, cover and let stand 10 minutes until bulgur absorbs moisture.

    Sauté onion in olive oil until soft, add tomato paste, cumin, and red pepper flakes, cook 2 minutes.

    Mix onion mixture into lentil-bulgur, add salt and knead while still warm.

    Let cool, then add parsley, spring onions, mint, and lemon juice.

    Shape into oval patties with wet hands and arrange on a platter.

    Serve at room temperature with lettuce leaves for wrapping.
