Ingredients
- 8 large eggs
- 1/4 cup whole milk
- 1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
- 4 oz goat cheese, crumbled
- 2 tbsp butter
- 1/4 cup fresh chives, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper

1Preheat your oven broiler. Blanch asparagus in boiling water for 2 minutes, then drain and set aside.

2Whisk eggs, milk, salt, and pepper together in a large bowl until well combined.

3Melt butter in a 10-inch oven-safe skillet over medium heat. Add asparagus and sauté for 2 minutes.

4Pour egg mixture over asparagus and cook without stirring until edges begin to set, about 4-5 minutes.

5Dot the top with goat cheese crumbles and place under broiler for 3-4 minutes until golden and puffed.

6Sprinkle with fresh chives, slice into wedges, and serve warm.
