Ingredients

  • 8 large eggs
  • 1/4 cup whole milk
  • 1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
  • 4 oz goat cheese, crumbled
  • 2 tbsp butter
  • 1/4 cup fresh chives, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

    Preheat your oven broiler. Blanch asparagus in boiling water for 2 minutes, then drain and set aside.

    Whisk eggs, milk, salt, and pepper together in a large bowl until well combined.

    Melt butter in a 10-inch oven-safe skillet over medium heat. Add asparagus and sauté for 2 minutes.

    Pour egg mixture over asparagus and cook without stirring until edges begin to set, about 4-5 minutes.

    Dot the top with goat cheese crumbles and place under broiler for 3-4 minutes until golden and puffed.
