Khanom Krok (Thai Coconut Rice Pancakes)

Ingredients

  • 1 cup rice flour
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1/2 cup thick coconut cream
  • 2 tbsp green onions, finely chopped
  • 2 tbsp corn kernels

Instructions

    Mix rice flour, coconut milk, water, sugar and salt to make a smooth batter. Let rest for 15 minutes.

    Heat a khanom krok pan (or aebleskiver pan) over medium heat and lightly grease each cup.

    Fill each cup halfway with batter, then add a small spoonful of thick coconut cream on top.

    Add green onions or corn as toppings, cover and cook for 3-4 minutes until edges are crispy and golden.

    Carefully remove with a skewer, pairing two halves together. Serve warm.
