Ingredients

  • 1 cup rice flour
  • 1/2 cup tapioca flour
  • 1 cup coconut milk
  • 1/2 cup coconut cream
  • 1/4 cup palm sugar
  • 1/2 tsp salt
  • 2 tbsp green onions, finely chopped
  • 2 tbsp sweet corn kernels
  • 1 tbsp vegetable oil

Instructions

    Mix rice flour and tapioca flour together in a bowl. Gradually add coconut milk and stir until smooth.

    In a separate bowl, combine coconut cream with palm sugar and salt. Stir until sugar dissolves.

    Heat a khanom krok pan over medium heat and brush each well with oil.

    Fill each well halfway with the rice flour batter. Cook for 2 minutes until edges set.

    Add a small spoonful of coconut cream mixture on top, then sprinkle with green onions or corn.

    Cover and cook for 3-4 minutes until edges are crispy and centers are creamy. Remove and serve warm.
