- 4 brioche slices
- 50g salted butter, softened
- 200g mixed spring berries (strawberries, raspberries)
- 100g sugar
- 1 tbsp lemon juice
- 1 vanilla pod

1Combine the berries, sugar, lemon juice, and vanilla seeds in a small saucepan over medium heat.

2Simmer for 15-20 minutes, stirring occasionally, until the jam thickens slightly.
