Ingredients
- 2 cups flattened rice (poha)
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 10-12 curry leaves
- 1 medium onion, finely chopped
- 2 green chilies, slit
- 1/4 cup roasted peanuts
- 1/2 tsp turmeric powder
- 1 tsp sugar
- to taste salt
- 2 tbsp fresh coriander, chopped
- 1 lime, juiced
Instructions

1Rinse the poha gently in water and drain. Let it sit for 5 minutes until softened.

2Heat oil in a pan, add mustard seeds and let them splutter. Add curry leaves and green chilies.

3Add onions and sauté until translucent. Add peanuts and fry for a minute.

4Add turmeric, salt, and sugar. Mix well.

5Add the softened poha and gently toss to combine all ingredients evenly.

6Garnish with fresh coriander and squeeze lime juice before serving warm.
