Ingredients

  • 2 cups flattened rice (poha)
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 10-12 curry leaves
  • 1 medium onion, finely chopped
  • 2 green chilies, slit
  • 1/4 cup roasted peanuts
  • 1/2 tsp turmeric powder
  • 1 tsp sugar
  • to taste salt
  • 2 tbsp fresh coriander, chopped
  • 1 lime, juiced

Instructions

    Rinse the poha gently in water and drain. Let it sit for 5 minutes until softened.

    Heat oil in a pan, add mustard seeds and let them splutter. Add curry leaves and green chilies.

    Add onions and sauté until translucent. Add peanuts and fry for a minute.

    Add turmeric, salt, and sugar. Mix well.

    Add the softened poha and gently toss to combine all ingredients evenly.

    Garnish with fresh coriander and squeeze lime juice before serving warm.
