Vegetable Poha

Ingredients

  • 200g flattened rice (poha)
  • 1 medium onion, finely chopped
  • 1 small potato, diced
  • 1/2 cup green peas
  • 2 green chilies, slit
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 10 curry leaves
  • 2 tbsp vegetable oil
  • 1 tbsp lemon juice
  • 2 tbsp fresh coriander, chopped
  • to taste salt

Instructions

    Rinse the poha gently in water until soft, drain well and set aside.

    Heat oil in a pan, add mustard seeds and let them splutter, then add curry leaves and green chilies.

    Add diced potatoes and cook until slightly tender, about 5 minutes.

    Add onions and peas, sauté until onions turn translucent.

    Add turmeric powder and salt, mix well.

    Add the softened poha and gently toss to combine all ingredients evenly.

    Drizzle lemon juice, garnish with fresh coriander and serve warm.
