Spring Chicken Salad Sandwich

Ingredients

  • 250g cooked chicken breast, diced
  • 2 stalks celery, finely chopped
  • 2 tbsp fresh dill, chopped
  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 ciabatta rolls
  • 1 cup arugula
  • to taste salt and pepper

Instructions

    In a medium bowl, combine the diced chicken, celery, and fresh dill.

    In a small bowl, whisk together mayonnaise, lemon juice, and Dijon mustard until smooth.

    Pour the dressing over the chicken mixture and toss to coat evenly. Season with salt and pepper.

    Slice the ciabatta rolls in half and lightly toast them.

    Layer arugula on the bottom half of each roll, top with the chicken salad, and close with the top half.
