Ingredients

  • 300g ground chicken
  • 2 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tbsp toasted rice powder
  • 2 shallots, thinly sliced
  • 3 spring onions, chopped
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro
  • 1 tsp dried chili flakes
  • 8 butter lettuce leaves
  • 1 tsp sugar

Instructions

    Cook ground chicken in a dry pan over medium heat until fully cooked, breaking it into small pieces.

    Remove from heat and let cool slightly for 2 minutes.

    In a bowl, mix fish sauce, lime juice, sugar, and chili flakes.

    Combine the cooked chicken with the dressing, shallots, spring onions, and toasted rice powder.

    Fold in fresh mint and cilantro leaves.
