Ingredients
- 500g ground lamb
- 200g fine bulgur wheat
- 2 large onions, finely chopped
- 100g pine nuts
- 1 tsp allspice
- 1 tsp cinnamon
- 1/2 tsp cumin
- 4 tbsp olive oil
- 1/2 cup fresh mint, chopped
- to taste salt and pepper
Instructions

1Soak bulgur in cold water for 30 minutes, then drain and squeeze out excess water.

2Mix half the lamb with soaked bulgur, half the spices, salt, and pepper to create the shell mixture.

3Sauté onions in olive oil until golden, add remaining lamb, pine nuts, remaining spices, and cook until browned.

4Press half the shell mixture into a greased baking dish, spread the filling evenly, then top with remaining shell mixture.

5Score the top into diamond shapes, drizzle generously with olive oil, and bake at 180°C for 40-45 minutes until golden.

6Let rest for 10 minutes before serving with fresh mint and yogurt on the side.
