Ingredients
- 2 cups green papaya, julienned
- 8 cherry tomatoes, halved
- 1/2 cup green beans, cut into 1-inch pieces
- 2 garlic cloves
- 2 Thai chilies
- 2 tbsp palm sugar
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 2 tbsp dried shrimp
- 2 tbsp crushed peanuts
Instructions

1In a large mortar and pestle, pound garlic and chilies until crushed.

2Add palm sugar and continue pounding until dissolved.

3Add green beans and tomatoes, lightly bruising them.

4Add shredded papaya and pound gently to mix.

5Season with fish sauce and lime juice, then add dried shrimp.

6Toss everything together and garnish with crushed peanuts before serving.
