Ingredients

  • 1 medium green papaya, shredded
  • 2 Thai bird chilies, sliced
  • 2 cloves garlic
  • 2 cherry tomatoes, halved
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tsp palm sugar
  • 3 tbsp roasted peanuts, crushed
  • 2 long beans, cut into 2-inch pieces
  • 1/4 cup dried shrimp (optional)

Instructions

    In a large mortar, lightly bruise the garlic cloves and chilies together.

    Add the long beans and cherry tomatoes to the mortar and gently pound to release flavors.

    Add the shredded green papaya and dried shrimp, and lightly toss together with a gentle pounding motion.

    In a small bowl, mix lime juice, fish sauce, and palm sugar until the sugar dissolves.

    Pour the dressing over the papaya mixture and toss gently to combine.

    Transfer to a serving plate and top with crushed roasted peanuts.
