Smoked Salmon and Scrambled Eggs on Toast

Ingredients

  • 4 eggs
  • 50g smoked salmon
  • 2 slices bread
  • 25g butter
  • 2 tbsp cream
  • 1 lemon
  • to taste salt and pepper
  • 1 tsp fresh dill

Instructions

    Toast the bread slices until golden brown and butter generously while still warm.

    Crack eggs into a bowl and beat together with cream, salt, and pepper.

    Melt remaining butter in a non-stick pan over medium-low heat.

    Pour in egg mixture and stir gently and continuously until soft, creamy curds form, approximately 3-4 minutes.

    Arrange smoked salmon on the buttered toast.

    Spoon scrambled eggs onto the salmon and toast.

    Garnish with fresh dill and a squeeze of lemon juice.
