Vietnamese Beef Stew with Star Anise (Thịt Kho)

Ingredients

  • 1.5 kg beef chuck, cut into large chunks
  • 4 shallots, halved
  • 4 cloves garlic, minced
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 2 star anise
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 2 bay leaves

Instructions

    Heat oil in a large pot over medium-high heat. Brown the beef chunks on all sides in batches, then set aside.

    In the same pot, caramelize the shallots until golden, about 5 minutes. Add minced garlic and stir for 1 minute.

    Return beef to the pot. Sprinkle sugar over the meat and stir constantly for 2-3 minutes to create a caramel coating.

    Add fish sauce, star anise, bay leaves, and black pepper. Stir well to combine.

    Pour in water and bring to a boil. Reduce heat to low, cover, and simmer for 60-75 minutes until beef is very tender, stirring occasionally.

    Adjust seasoning with additional fish sauce or sugar if needed. The sauce should be rich, glossy, and deeply brown.

    Serve hot over steamed jasmine rice with fresh herbs and pickled vegetables on the side.
