Jok Gai – Thai Rice Porridge with Chicken

Ingredients

  • 200 grams jasmine rice
  • 800 ml chicken broth
  • 200 grams chicken breast
  • 4 cloves garlic, thinly sliced
  • 3 green onions, chopped
  • 2 tablespoons fish sauce
  • 1 teaspoon white pepper
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
  • 2 tablespoons crispy fried shallots

Instructions

    Bring chicken broth to a boil in a large pot, add whole chicken breast and simmer for 12-15 minutes until cooked through

    Remove chicken and shred into bite-sized pieces, set aside

    Add rice to the broth and stir well, reduce heat to low and simmer for 20 minutes, stirring occasionally until rice breaks down and becomes creamy

    Season with fish sauce and white pepper

    Heat oil in a small pan and fry sliced garlic until golden and crispy, drain on paper towels

    Pour porridge into bowls, top with shredded chicken, fried garlic, green onions, cilantro, and crispy shallots
