Ingredients
- 4 large eggs
- 100g smoked salmon slices
- 2 English muffins
- 50g butter
- 60ml fresh cream
- to taste sea salt and cracked black pepper
- 1 tbsp fresh chives, chopped
- 1 lemon, for garnish
Instructions

1Split and toast the English muffins until golden brown, then butter generously.

2Whisk eggs with cream, salt, and pepper in a bowl.

3Melt butter in a non-stick pan over medium heat.

4Pour in egg mixture and stir gently and continuously for 3-4 minutes until soft and creamy curds form.

5Arrange toasted muffins on plates and layer with smoked salmon.

6Spoon creamy scrambled eggs onto the salmon and muffins.

7Garnish with fresh chives and a squeeze of lemon juice.

8Serve immediately while warm.
