Ingredients

  • 2 chicken breasts (200g each)
  • 150ml mayonnaise
  • 2 tablespoons curry powder
  • 1 tablespoon mango chutney
  • 1 tablespoon lemon juice
  • 100g mixed salad leaves
  • 50g cucumber, sliced
  • 100g spring vegetables (peas, beans)
  • 2 spring onions, chopped
  • to taste salt and pepper

Instructions

    Poach the chicken breasts in gently simmering water for 15-18 minutes until cooked through. Remove and allow to cool, then cut into bite-sized pieces.

    Mix the mayonnaise with curry powder, mango chutney, and lemon juice until well combined. Season with salt and pepper to taste.

    Fold the cooled chicken pieces into the curry mayonnaise mixture until evenly coated.

    Arrange mixed salad leaves on serving plates and top with the coronation chicken.

    Scatter the cucumber, spring vegetables, and spring onions around the chicken.

    Serve immediately at room temperature or lightly chilled.
