Käsespätzle with Green Salad

Ingredients

  • 200 g flour
  • 3 eggs
  • 100 ml water
  • 150 g Emmental or Gruyère cheese, grated
  • 1 onion, sliced
  • 2 tbsp butter
  • 100 g mixed spring greens
  • 2 tbsp vinaigrette
  • salt and pepper to taste

Instructions

    Mix flour, eggs, water, and salt to create a thick batter for spätzle.

    Bring a large pot of salted water to boil.

    Press batter through a spätzle maker or colander into boiling water; cook until noodles float and bob for 1-2 minutes.

    Drain spätzle and transfer to a serving dish.

    In a skillet, melt 1 tbsp butter and sauté sliced onions until golden and crispy; set aside.

    Toss warm spätzle with remaining butter and grated cheese until melted and creamy.

    Top with crispy onions.

    Dress spring greens with vinaigrette on the side.

    Serve warm with salad alongside.
