Ingredients
- 200 g flour
- 3 eggs
- 100 ml water
- 150 g Emmental or Gruyère cheese, grated
- 1 onion, sliced
- 2 tbsp butter
- 100 g mixed spring greens
- 2 tbsp vinaigrette
- salt and pepper to taste
Instructions

1Mix flour, eggs, water, and salt to create a thick batter for spätzle.

2Bring a large pot of salted water to boil.

3Press batter through a spätzle maker or colander into boiling water; cook until noodles float and bob for 1-2 minutes.

4Drain spätzle and transfer to a serving dish.

5In a skillet, melt 1 tbsp butter and sauté sliced onions until golden and crispy; set aside.

6Toss warm spätzle with remaining butter and grated cheese until melted and creamy.

7Top with crispy onions.

8Dress spring greens with vinaigrette on the side.

9Serve warm with salad alongside.
