Ingredients

  • 4 fresh nopal cactus paddles, cleaned and diced
  • 2 ripe tomatoes, diced
  • 1/2 white onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, minced (optional)

Instructions

    Boil the diced nopal paddles in salted water for 15 minutes until tender, then drain and rinse with cold water to remove any sliminess.

    In a large bowl, combine the cooled nopales with diced tomatoes, chopped onion, and fresh cilantro.

    Whisk together lime juice, olive oil, salt, pepper, and jalapeño in a small bowl to create the dressing.

    Pour the dressing over the salad and toss gently until all ingredients are well coated.
