Chicken Tikka Masala

Ingredients

  • 800 g chicken breast, cut into chunks
  • 1 cup plain yogurt
  • 3 tablespoons tikka masala paste
  • 400 ml coconut cream
  • 400 g canned tomatoes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

    Marinate chicken in yogurt, 1 tablespoon tikka paste, salt, and pepper for 30 minutes.

    Heat oil in a large pan and add cumin seeds until fragrant.

    Add onions and cook until golden brown, about 8 minutes.

    Stir in garlic and ginger, cook for 2 minutes.

    Add remaining tikka paste and cook for 1 minute until aromatic.

    Pour in canned tomatoes and simmer for 10 minutes.

    Add the marinated chicken and cook for 15 minutes until cooked through.

    Stir in coconut cream and simmer for another 10 minutes.

    Season with salt and pepper to taste.

    Garnish with fresh cilantro and serve hot with rice or naan.
