Ingredients

  • 200 ramen noodles
  • 1 liter dashi stock (chilled)
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 2 eggs
  • 100g cucumber (julienned)
  • 50g tomato (sliced)
  • 50g cooked chicken breast (sliced)
  • 1 sheet nori seaweed
  • 2 green onions (chopped)
  • ice for chilling

Instructions

    Bring water to boil and cook ramen noodles according to package instructions. Drain and rinse under cold water with ice until completely chilled.

    In a small bowl, combine chilled dashi stock, soy sauce, mirin, and sesame oil to make the dipping sauce. Chill in refrigerator.

    Boil eggs for 6-7 minutes to make soft-boiled eggs. Cool under cold water, then peel and halve.

    Arrange chilled noodles in individual bowls. Top with cucumber, tomato, chicken, egg halves, and nori strips.

    Pour chilled dipping sauce into separate small bowls. Serve noodles with sauce on the side for dipping.

    Garnish with green onions and sesame seeds before serving.
