Ingredients

  • 800 g boneless chicken breast, cubed
  • 4 tablespoons butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons tomato paste
  • 400 ml canned crushed tomatoes
  • 200 ml heavy cream
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon chili powder
  • 1 teaspoon turmeric
  • 2 tablespoons oil
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon sugar

Instructions

  1. 1
Heat oil in a large pan and season chicken with salt and pepper. Cook until golden on all sides, then remove and set aside.
  2. 2
In the same pan, melt butter and sauté chopped onions until soft and translucent, about 5 minutes.
  3. 3
Add minced garlic and ginger, cook for 1-2 minutes until fragrant.
  4. 4
Stir in tomato paste and cook for 2 minutes, then add crushed tomatoes and all spices (garam masala, cumin, paprika, chili powder, turmeric).
  5. 5
Simmer the sauce for 10-12 minutes, stirring occasionally, until it thickens slightly.
  6. 6
Return the cooked chicken to the pan and stir well to coat with the sauce.
  7. 7
Reduce heat to low and slowly pour in heavy cream, stirring continuously until well combined.
  8. 8
Simmer for 8-10 minutes on low heat until the chicken is fully cooked and tender.
  9. 9
Taste and adjust seasoning with salt and sugar as needed. The sauce should be creamy and balanced.
  10. 10
Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
