French Brioche French Toast with Berry Compote

French Brioche French Toast with Berry Compote

🟡 Medium

Ingredients

  • 4 slices brioche bread
  • 2 eggs
  • 100 ml whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 200 grams fresh summer berries (strawberries, raspberries, blueberries)
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • To taste powdered sugar

Instructions

  1. 1
Prepare the berry compote: In a small saucepan, combine fresh berries, sugar, and lemon juice. Cook over medium heat for 8-10 minutes, stirring occasionally, until berries soften and release their juices. Set aside to cool slightly.
  2. 2
Make the custard mixture: Whisk together eggs, milk, and vanilla extract in a shallow bowl until well combined.
  3. 3
Dip brioche slices: Take each slice of brioche and dip it quickly into the custard mixture, ensuring both sides are coated but not soaked through. Brioche is delicate, so dip briefly.
  4. 4
Cook the French toast: Heat butter in a large skillet over medium heat. Once melted and foaming, place the custard-coated brioche slices in the pan. Cook for 3-4 minutes on each side until golden brown and slightly crispy on the edges.
  5. 5
Assemble and serve: Place warm French toast on serving plates, top generously with berry compote, and dust with powdered sugar. Serve immediately while still warm.
