Ingredients

  • 4 poblano peppers
  • 2 cups Oaxaca cheese or mozzarella
  • 6 eggs, separated
  • 3 tomatoes
  • 2 garlic cloves
  • 1/4 cup vegetable oil
  • 2 cups chicken broth
  • to taste salt and pepper

Instructions

    Roast poblano peppers over an open flame until blackened, place in a plastic bag for 5 minutes to steam, then peel off the skin carefully

    Make a lengthwise slit and remove seeds gently, keeping the pepper intact

    Stuff each pepper with a portion of cheese

    Beat egg whites until stiff peaks form, then gently fold in egg yolks

    Heat oil in a large skillet over medium heat

    Dip each stuffed pepper in the egg batter and fry until golden on both sides, about 3-4 minutes per side

    Blend tomatoes with garlic and strain to create sauce

    Simmer sauce with broth for 10 minutes, season with salt and pepper

    Arrange fried peppers in a serving dish and pour warm sauce over them
