Vietnamese Braised Catfish with Dill

Ingredients

  • 800g catfish fillets, cut into chunks
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 cup fresh dill, chopped
  • 1 cup water
  • 1 red chili, sliced
  • Black pepper to taste

Instructions

    Heat oil in a clay pot or heavy-bottomed pan over medium-high heat.

    Add minced garlic and cook until fragrant, about 1 minute.

    Add sugar and stir constantly until it caramelizes to a dark amber color, about 3-4 minutes.

    Add catfish pieces and stir to coat with the caramel sauce.

    Pour in fish sauce and water, then add sliced chili.

    Bring to a boil, then reduce heat and simmer covered for 25-30 minutes until fish is tender.

    Stir in fresh dill and cook for another 2 minutes.

    Season with black pepper to taste.

    Fry shallots separately in a bit of oil until golden and crispy, then sprinkle on top before serving.
