Ingredients
- 800g catfish fillets, cut into chunks
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 1 tablespoon vegetable oil
- 1 cup fresh dill, chopped
- 1 cup water
- 1 red chili, sliced
- Black pepper to taste
Instructions

1Heat oil in a clay pot or heavy-bottomed pan over medium-high heat.

2Add minced garlic and cook until fragrant, about 1 minute.

3Add sugar and stir constantly until it caramelizes to a dark amber color, about 3-4 minutes.

4Add catfish pieces and stir to coat with the caramel sauce.

5Pour in fish sauce and water, then add sliced chili.

6Bring to a boil, then reduce heat and simmer covered for 25-30 minutes until fish is tender.

7Stir in fresh dill and cook for another 2 minutes.

8Season with black pepper to taste.

9Fry shallots separately in a bit of oil until golden and crispy, then sprinkle on top before serving.
