Ingredients
- 2 cups cooked rice
- 1 cup fresh spinach
- 1 carrot, julienned
- 1 cup zucchini, julienned
- 100g shiitake mushrooms, sliced
- 2 eggs
- 3 tbsp gochujang (Korean red chili paste)
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp sesame seeds
- Salt and pepper to taste
Instructions

1Blanch spinach for 2 minutes, drain, and season with sesame oil, garlic, soy sauce, and salt.

2Sauté carrot and zucchini separately with a pinch of salt until tender-crisp, about 2 minutes each.

3Cook mushrooms in a dry pan until golden, then season with soy sauce and sesame oil.

4Fry eggs sunny-side up in a separate pan.

5Divide cooked rice between two bowls and arrange vegetables in sections on top.

6Make a small well in the center of each bowl and place one fried egg in it.

7Mix gochujang with 1 tbsp sesame oil and 1 tbsp water to create sauce, drizzle over the bowl.

8Sprinkle sesame seeds and serve immediately, stirring everything together before eating.
