Beef Pot Roast with Root Vegetables

Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 carrots, cut into chunks
  • 4 medium potatoes, cut into chunks
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Preheat oven to 325°F (163°C).

    Heat oil in a large Dutch oven over medium-high heat. Season beef roast with salt and pepper, then brown on all sides for 8-10 minutes. Remove and set aside.

    In the same pot, sauté onion and garlic until softened, about 3 minutes.

    Add carrots and potatoes, cook for 2 minutes, stirring occasionally.

    Return beef to the pot. Add beef broth, red wine, bay leaves, thyme, and rosemary.

    Bring to a simmer, then cover and transfer to the oven.

    Braise for 2.5 to 3 hours, until beef is fork-tender and vegetables are cooked through.

    Remove bay leaves, adjust seasoning, and serve hot in bowls with the broth.
