Ingredients
- 3 pounds beef chuck roast
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 carrots, cut into chunks
- 4 medium potatoes, cut into chunks
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

1Preheat oven to 325°F (163°C).

2Heat oil in a large Dutch oven over medium-high heat. Season beef roast with salt and pepper, then brown on all sides for 8-10 minutes. Remove and set aside.

3In the same pot, sauté onion and garlic until softened, about 3 minutes.

4Add carrots and potatoes, cook for 2 minutes, stirring occasionally.

5Return beef to the pot. Add beef broth, red wine, bay leaves, thyme, and rosemary.

6Bring to a simmer, then cover and transfer to the oven.

7Braise for 2.5 to 3 hours, until beef is fork-tender and vegetables are cooked through.

8Remove bay leaves, adjust seasoning, and serve hot in bowls with the broth.
