Gyeran Mari (Korean Egg Roll)

Ingredients

  • 4 large eggs
  • 50g diced ham
  • 1/4 carrot, finely julienned
  • 1/4 zucchini, finely julienned
  • 2 shiitake mushrooms, finely chopped
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 tbsp vegetable oil for cooking
  • 1 tsp soy sauce for dipping

Instructions

    Heat 1 tbsp vegetable oil in a small pan over medium heat and lightly sauté the diced ham, carrots, zucchini, and mushrooms for 2 minutes until softened. Season with salt and pepper, then set aside to cool slightly.

    Beat 4 eggs in a bowl with sesame oil, salt, and white pepper until well combined.

    Heat a non-stick pan or tamagoyaki pan over medium heat and lightly oil it. Pour half the egg mixture to create a thin, wide omelet.

    When the omelet is nearly set but still slightly wet on top, spread half the vegetable-ham mixture across the center of the omelet.

    Using chopsticks or a spatula, carefully roll the omelet tightly from one end to the other, enclosing the filling.

    Remove from pan and place seam-side down on a cutting board. Repeat with remaining egg mixture and filling to create a second roll.

    Allow rolls to cool for 1-2 minutes, then slice into 1-inch pieces and arrange on a plate.

    Serve warm with soy sauce for dipping and a glass of cold barley tea or fresh orange juice.
