Ingredients

  • 1.5 kg beef chuck, cubed
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 400 ml red wine
  • 400 g canned tomatoes
  • 3 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon cinnamon
  • 3 whole cloves
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 500 g pasta or rice

Instructions

    Heat olive oil in a large heavy-bottomed pot over medium-high heat.

    Brown the beef cubes in batches until golden on all sides, about 8-10 minutes per batch. Remove and set aside.

    In the same pot, sauté chopped onions until softened, about 5 minutes.

    Add minced garlic and cook for 1 minute until fragrant.

    Stir in tomato paste and cook for 2 minutes.

    Deglaze with red wine, scraping up any browned bits from the bottom.

    Return beef to the pot and add canned tomatoes, bay leaves, cinnamon, and cloves.

    Bring to a boil, then reduce heat to low and simmer covered for 1.5-2 hours until beef is very tender.

    Season with salt and pepper to taste.

    Serve the pastitsada over freshly cooked pasta or rice.
