- 500g fresh cactus paddles (nopales), cleaned and diced
- 3 medium tomatoes, diced
- 1 white onion, finely chopped
- 2 fresh jalapeños, minced
- 1/2 cup fresh cilantro, chopped

- 2 tablespoons extra virgin olive oil
- to taste sea salt and black pepper
- optional crumbled queso fresco cheese
Instructions

1Boil the diced cactus paddles in salted water for 8-10 minutes until tender, then drain and rinse well

2Place cooled cactus in a large bowl and add diced tomatoes, onion, jalapeños, and cilantro

3Drizzle with olive oil and lime juice, then toss gently to combine
