Ingredients
- 1 medium green papaya, shredded
- 3 Thai bird's eye chilies, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh lime juice
- 1 tablespoon fish sauce
- 1 tablespoon palm sugar
- ¼ cup long beans, cut into 2-inch pieces
- ¼ cup cherry tomatoes, halved
- ¼ cup roasted peanuts, crushed
- 2 tablespoons dried shrimp, optional
Instructions

1In a large mortar and pestle, lightly bruise the garlic and chilies together to release their flavors.

2Add the cut long beans and tomatoes, gently press to lightly soften them.

3Add the shredded green papaya and dried shrimp if using, toss and gently bruise to combine.

4In a small bowl, whisk together lime juice, fish sauce, and palm sugar until the sugar dissolves.

5Pour the dressing over the papaya mixture and toss well to combine all ingredients.

6Transfer to a serving plate and top with crushed roasted peanuts.
