Ingredients

  • 1.5 kg beef chuck, cut into chunks
  • 500 ml red wine
  • 400 g pearl onions, peeled
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp cocoa powder
  • 3 cloves garlic, minced
  • 200 ml beef broth
  • 3 tbsp olive oil
  • 1 tsp ground cinnamon
  • to taste salt and pepper
  • 2 tbsp red wine vinegar

Instructions

    Heat olive oil in a large heavy-bottomed pot over medium-high heat.

    Season beef chunks with salt and pepper, then brown them in batches for 3-4 minutes per side. Remove and set aside.

    In the same pot, add pearl onions and garlic, sauté for 2 minutes until fragrant.

    Stir in tomato paste and cook for 1 minute to caramelize slightly.

    Pour in red wine, scraping up any browned bits from the bottom of the pot.

    Return beef to the pot and add beef broth, bay leaves, cinnamon, and cocoa powder.

    Bring to a boil, then reduce heat to low, cover, and simmer for 2.5 hours until beef is extremely tender.

    Stir in red wine vinegar and adjust seasoning to taste.

    Serve hot in bowls, optionally over pasta or with crusty bread.
