Moroccan Chicken Tagine with Preserved Lemons and Olives

Ingredients

  • 1.5 kg chicken thighs, skin-on and bone-in
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 1 preserved lemon, quartered
  • 1 cup green olives, pitted
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 0.5 teaspoon ground cinnamon
  • pinch saffron threads
  • 3 tablespoons olive oil
  • 1 cup chicken broth
  • 2 tablespoons fresh cilantro, chopped
  • salt and pepper to taste

Instructions

    Heat olive oil in a large tagine or heavy-bottomed pot over medium-high heat.

    Season chicken thighs with salt and pepper, then brown them on all sides for 5-7 minutes. Remove and set aside.

    In the same pot, sauté sliced onions until softened, about 4 minutes. Add minced garlic and cook for 1 minute until fragrant.

    Stir in cumin, ginger, turmeric, cinnamon, and saffron, cooking for 1-2 minutes to bloom the spices.

    Return chicken to the pot and pour in chicken broth. Add preserved lemon quarters and green olives.

    Cover and simmer on low heat for 35-40 minutes, until chicken is tender and cooked through.

    Taste and adjust seasoning with salt and pepper. Garnish with fresh cilantro before serving.
