Ingredients

  • 1.5 kg beef chuck, cubed
  • 1 kg pearl onions
  • 400 ml red wine
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 3 bay leaves
  • 1 teaspoon ground cinnamon
  • 4 whole cloves
  • 200 ml beef stock
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano
  • to taste salt and pepper

Instructions

    Heat olive oil in a large, heavy-bottomed pot over medium-high heat.

    Season beef cubes with salt and pepper, then brown them in batches until golden on all sides. Remove and set aside.

    Add pearl onions to the pot and sauté until lightly caramelized, about 5 minutes.

    Stir in minced garlic and tomato paste, cooking for 2 minutes until fragrant.

    Pour in red wine and red wine vinegar, scraping up any browned bits from the bottom of the pot.

    Return beef to the pot and add beef stock, bay leaves, cinnamon, cloves, and oregano.

    Bring to a boil, then reduce heat to low, cover, and simmer for 2 to 2.5 hours until beef is very tender.

    Taste and adjust seasoning with salt and pepper as needed.

    Serve hot in deep bowls with crusty bread to soak up the rich sauce.
