Ingredients
- 500g beef ribeye, thinly sliced
- 300g mixed mushrooms, sliced
- 200g Chinese cabbage, chopped
- 150g daikon radish, sliced
- 100g enoki mushrooms
- 6 cups beef stock
- 4 slices ginger
- 3 dried red chilies
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 star anise
- 1 tsp Sichuan peppercorns
- 2 green onions, chopped
- 1 tbsp rice wine
Instructions

1Prepare the broth base by heating stock in a large hotpot or heavy-bottomed pot over medium-high heat.

2Add ginger slices, dried chilies, star anise, Sichuan peppercorns, and rice wine to the broth. Simmer for 10 minutes to infuse flavors.

3Add soy sauce and sesame oil to the broth and adjust seasoning to taste.

4Arrange all prepared ingredients (beef, mushrooms, vegetables) on a large serving platter around the hotpot.

5Place the hotpot on a portable burner at the table for communal cooking.

6Guests can add ingredients to the simmering broth in small batches, cooking until beef is tender (30 seconds) and vegetables are softened (2-3 minutes).

7Serve each portion with a small dipping sauce cup of soy sauce mixed with sesame oil and chopped green onions.

8Continue cooking and eating until all desired ingredients are consumed.
