Lamb and Lentil Stew with Swiss Chard

Ingredients

  • 800 g lamb shoulder, cut into chunks
  • 1 cup brown lentils
  • 400 g canned tomatoes
  • 300 g swiss chard, chopped
  • 2 onions, diced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 3 tbsp olive oil
  • 1 liter beef stock
  • to taste salt and pepper

Instructions

    Heat olive oil in a large pot over medium-high heat.

    Brown the lamb chunks on all sides (about 8-10 minutes). Remove and set aside.

    In the same pot, sauté diced onions until golden, then add minced garlic.

    Stir in tomato paste, cinnamon, and cumin, cooking for 2 minutes.

    Add the browned lamb back to the pot along with beef stock and bring to a boil.

    Reduce heat and simmer for 30 minutes, then add brown lentils.

    Continue simmering for another 30 minutes until lentils are tender.

    Add chopped swiss chard and canned tomatoes, simmer for 10 more minutes.

    Season with salt and pepper to taste.

    Serve hot over steamed rice.
