Beef Bourguignon

Ingredients

  • 2 kg beef chuck, cut into chunks
  • 200 g lardons or bacon, diced
  • 400 ml red wine (Burgundy)
  • 250 ml beef broth
  • 2 carrots, chunked
  • 18 pearl onions
  • 250 g mushrooms, halved
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 2 thyme sprigs
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 3 tbsp olive oil
  • to taste salt and pepper

Instructions

    Preheat oven to 160°C (320°F).

    In a large Dutch oven, fry lardons until crispy, then remove and set aside.

    Brown beef in batches in the same pot with olive oil until all sides are caramelized. Remove and set aside.

    Sauté chopped onions and carrots until softened, then stir in tomato paste and flour, cooking for 2 minutes.

    Pour in red wine, scraping up browned bits from the bottom. Add beef broth, garlic, bay leaves, and thyme.

    Return beef and lardons to the pot. Bring to a simmer, cover, and transfer to oven for 2 hours.

    Add pearl onions and mushrooms, return to oven for another 45 minutes until beef is tender.

    Season with salt and pepper. Serve hot with crusty bread or egg noodles.
