Ingredients
- 4 eggs
- 100g fresh mushrooms, finely diced
- 80g spinach, blanched and squeezed dry
- 50g ham, finely diced
- 1 carrot, finely julienned
- 1 tsp sesame oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp vegetable oil for cooking
Instructions

1Sauté diced mushrooms in sesame oil for 2 minutes until softened. Set aside to cool.

2Mix cooled mushrooms, spinach, ham, and carrot in a bowl. Season with salt and pepper.

3Beat the eggs in a separate bowl with a pinch of salt.

4Heat 1 tsp oil in a non-stick pan over medium heat. Pour beaten eggs to create a thin, even omelette layer.

5When the omelette is nearly set but still slightly wet on top, spread the vegetable-ham mixture evenly across the surface.

6Roll the omelette tightly from one end to the other using a spatula or your hands.

7Slice the rolled omelette into 1-inch thick pieces and serve warm with soy sauce or ketchup on the side.
