  • 200 ml red wine
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 4 whole cloves
  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. 1
Heat olive oil in a large heavy-bottomed pot over medium-high heat.
  2. 2
Season beef cubes with salt and pepper, then brown them in batches until golden. Set aside.
  3. 3

Stir in minced garlic and tomato paste, cooking for 2 minutes until fragrant.

Pour in red wine and scrape up any browned bits from the bottom of the pot.
  6. 6
Return beef to the pot and add beef stock, bay leaves, oregano, cloves, and cinnamon stick.

Bring to a simmer, then reduce heat to low, cover, and cook for 2 to 2.5 hours until beef is very tender.
  8. 8
Taste and adjust seasoning with salt and pepper. Remove cinnamon stick and bay leaves before serving.
  9. 9
Serve hot with crusty bread or rice.
