Medium
Ingredients
- 3 lbs beef chuck roast
- 3 carrots, cut into chunks
- 3 potatoes, quartered
- 2 parsnips, cut into chunks
- 1 large onion, quartered
- 4 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- 2 tbsp olive oil
- to taste salt and pepper
Instructions
-
1Preheat oven to 325°F (165°C). Season the beef roast generously with salt and pepper on all sides.
-
2Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast for 3-4 minutes on each side until browned, then remove and set aside.
-
3In the same pot, add onions and cook for 3 minutes until softened. Pour in beef broth, scraping up any browned bits from the bottom.
-
4Return the roast to the pot. Add bay leaves and thyme. Cover and transfer to the oven.
-
5Bake for 2 hours. Add carrots, potatoes, and parsnips. Continue cooking covered for another hour until vegetables are tender and meat is fall-apart soft.
-
6Remove bay leaves. Season to taste with salt and pepper. Serve hot in bowls with plenty of broth.
