Ingredients
- 1 cup rice flour
- 1/2 cup coconut milk
- 1/2 cup coconut cream
- 1/4 cup palm sugar
- 1/4 tsp salt
- 2 tbsp sweet corn kernels
- 1 tbsp chopped green onions
- 1 egg
- 1/2 cup water
Instructions

1Mix rice flour, coconut milk, water, palm sugar and salt to create a smooth batter for the base layer.

2Combine coconut cream with a pinch of salt for the creamy top layer.

3Heat a khanom krok pan or aebleskiver pan and lightly grease each well.

4Fill each well halfway with the base batter and cook for 2 minutes.

5Add a spoonful of coconut cream mixture on top, then sprinkle with corn or green onions.

6Cover and cook until edges are golden and crispy, about 3-4 minutes.

7Carefully remove the paired half-moons and serve warm.
