Khanom Krok (Thai Coconut Rice Pancakes)

Ingredients

  • 1 cup rice flour
  • 1/2 cup coconut milk
  • 1/2 cup coconut cream
  • 1/4 cup palm sugar
  • 1/4 tsp salt
  • 2 tbsp sweet corn kernels
  • 1 tbsp chopped green onions
  • 1 egg
  • 1/2 cup water

Instructions

    Mix rice flour, coconut milk, water, palm sugar and salt to create a smooth batter for the base layer.

    Combine coconut cream with a pinch of salt for the creamy top layer.

    Heat a khanom krok pan or aebleskiver pan and lightly grease each well.

    Fill each well halfway with the base batter and cook for 2 minutes.

    Add a spoonful of coconut cream mixture on top, then sprinkle with corn or green onions.

    Cover and cook until edges are golden and crispy, about 3-4 minutes.

    Carefully remove the paired half-moons and serve warm.
