Thai Larb Gai Lettuce Wraps

Ingredients

  • 300g ground chicken
  • 2 tbsp fish sauce
  • 3 tbsp lime juice
  • 2 tbsp toasted rice powder
  • 1 tsp chili flakes
  • 4 shallots, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 8 butter lettuce leaves
  • 2 green onions, sliced

Instructions

    Cook ground chicken in a dry pan over medium-high heat, breaking it apart until fully cooked through.

    Remove from heat and add fish sauce, lime juice, chili flakes, and toasted rice powder. Mix well.

    Fold in sliced shallots, green onions, mint, and cilantro.

    Spoon the warm larb mixture into crisp lettuce cups and serve immediately.
