Dakdoritang – Korean Spicy Chicken Stew

Ingredients

  • 1 kg chicken pieces, bone-in
  • 3 medium potatoes, cubed
  • 2 carrots, sliced
  • 1 onion, quartered
  • 4 green onions, cut into segments
  • 3 tbsp gochugaru (Korean red pepper flakes)
  • 3 tbsp soy sauce
  • 2 tbsp gochujang (Korean red pepper paste)
  • 1 tbsp minced garlic
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 2 cups water
  • 1 fresh spring zucchini, sliced

Instructions

    Mix gochugaru, soy sauce, gochujang, garlic, sugar, and sesame oil to make the sauce.

    Place chicken pieces in a large pot and coat with half the sauce. Let marinate for 10 minutes.

    Add potatoes, carrots, and onion to the pot with the chicken.

    Pour in water and remaining sauce, then bring to a boil.

    Reduce heat and simmer for 25-30 minutes until chicken is cooked through.

    Add zucchini and green onions, cook for another 5 minutes.

    Serve hot with steamed rice.
