Fattoush Salad

Ingredients

  • 1 pita bread
  • 1 romaine lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 cucumber, diced
  • 4 radishes, sliced
  • 3 green onions, chopped
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp sumac
  • 1 clove garlic, minced
  • 1 tsp pomegranate molasses
  • to taste salt and pepper

Instructions

    Cut pita bread into small squares and toast or fry until golden and crispy. Set aside.

    Combine lettuce, tomatoes, cucumber, radishes, green onions, mint, and parsley in a large bowl.

    Whisk together olive oil, lemon juice, sumac, garlic, pomegranate molasses, salt, and pepper.

    Pour dressing over vegetables and toss well.

    Add crispy pita chips just before serving and toss gently.

    Sprinkle extra sumac on top and serve immediately.
