Ingredients
- 1 cup rice flour
- 1/2 cup coconut milk
- 1/2 cup water
- 1/4 cup sugar
- 1/4 tsp salt
- 1/2 cup thick coconut cream
- 2 tbsp green onions, finely chopped
- 2 tbsp corn kernels
Instructions

1Mix rice flour, coconut milk, water, sugar and salt to make a smooth batter. Let rest for 15 minutes.

2Heat a khanom krok pan (or aebleskiver pan) over medium heat and lightly grease each cup.

3Fill each cup halfway with batter, then add a small spoonful of thick coconut cream on top.

4Add green onions or corn as toppings, cover and cook for 3-4 minutes until edges are crispy and golden.

5Carefully remove with a skewer, pairing two halves together. Serve warm.
