Kuzu Güveç (Turkish Lamb and Vegetable Stew)

Ingredients

  • 600g lamb shoulder, cubed
  • 2 medium potatoes, cubed
  • 2 zucchini, sliced
  • 1 eggplant, cubed
  • 2 tomatoes, diced
  • 2 green bell peppers, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • to taste salt and pepper
  • fresh parsley for garnish

Instructions

    Preheat oven to 180°C (350°F). Season lamb cubes with salt, pepper, paprika, and cumin.

    Heat olive oil in a large oven-safe clay pot or Dutch oven. Brown the lamb pieces on all sides, then remove and set aside.

    In the same pot, sauté onions until softened. Add garlic and tomato paste, cooking for 1-2 minutes until fragrant.

    Return lamb to the pot. Layer potatoes, eggplant, zucchini, tomatoes, and bell peppers on top.

    Pour beef broth over the vegetables. Cover tightly with lid or foil.

    Bake for 60-70 minutes until lamb is tender and vegetables are cooked through.

    Remove from oven, garnish with fresh parsley, and serve hot with crusty bread.
